It's Groundhog's Day! By Steven Kroll/1995 Cute story of a groundhog and his animal friends.
A Rookie Reader by Michelle Aki Becker Brand New, available Fall, 2003
Huff and Puff on Groundhog Day by Jeanne Warren A simple story, told in rhyme. At the end of the book there are several shadow-type activities for young children and piggy back songs. Part of the totline series.

Bear Shadow by Frank Asch Though not about groundhog's day, it is a great story for young children about shadows. Also, this book would be a good introduction to the author, Frank Asch, who has several Bear books. Reading level would be perfect for end of the year first graders, especially if used in a literature circle setting.
